King Arthur Recipe for Blueberry Muffins

  • 2 1/4 cups  whole wheat flour
  • 1 cup brown sugar
  • 3/4 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1 cup blueberries, fresh or frozen
  • 1 teaspoon vanilla
  • 1/3 cup vegetable oil
  • 1 1/2 cups buttermilk or plain (not Greek) yogurt; or 1 1/4 cups liquid whey*
  • cinnamon-sugar for topping, optional

Preheat oven 400

Grease muffin pan (12 muffins), whisk the dry ingredients together with berries, stir in wet ingredients, scoop into pan, throw into oven and wait 18 minutes or so.

  1. Hahaha… we used to have an english mastiff. If you left anything tasty on the counter and turned your back it was gone. His favorite was butter. If you didn’t watch it he would grab a whole stick and chew it in seconds. His coat was really shiny though. 🙂

      1. The other day I hid a 40lb bag of it in my bedroom closet because one of our Cavaliers likes to eat it. I forgot and left the door open. I have no idea how long she was in there inhaling seed, but lets just say it didn’t agree with her and I had to clean, vacuum, mop the floors because of all the undigested tiny seeds. Ugh. My husband just laughed at me because I kept reminding him to shut the closet door!
